Barefoot Contessa's Guacamole Salad

We tried this last night and it was damn good. Thought I'd share.

1 pint grape tomatoes, halved
1 yellow (or whatever the heck color you want) bell pepper, diced
1 (15 ounce) can black beans, rinsed and drained
1/2 cup diced purple onion
2 TBLSP minced jalapeno peppers (2 peppers - seeded, although I cut this in half...and note to self and others: DON'T chop a fresh jalapeno and then itch your eye - it's still burning)
1/2 tsp lime zest (one lime)
1/4 cup fresh squeezed lime juice (0ne lime)
1/4 cup olive oil
salt + pepper, to taste
one garlic glove, minced
cayenne pepper, just a little bit and only if you want...I forgot it and it tasted just fine
2 avocados, seeded, peeled, diced

Add the 1st 6 ingredients in a bowl.

In a separate bowl, whisk together the lime juice, s + p, garlic, cayenne pepper and drizzle in the olive oil while whisking. Pour over the veggies...Add the avocados just before you serve.

Great for the horribly hot, terribly terrible, stupid, dumb, hot days.
