Mmmm, tuna-noodley

Recently I resurrected a dish from yester-year and it's become a big hit in this house. So much so, that it's made its way into our weekly rotation. Thought I'd share...and if you've got a casserole, I'd love to hear the recipe. Casseroles are great: easy, cheap, great leftover.

Tuna Noodle Casserole

8 oz egg noodles (we use a bag of the No Yoke Dumplings)
1 can cream of mushroom soup (low sodium, reduced fat - it tastes just fine)
1/2-3/4 cup of milk
2 big handfuls of shredded cheddar cheese
1 can of tuna, drained
1/2 cup chopped red onion

1/2 roll of Ritz crackers
1 handful of shredded cheddar cheese
2 Tablespoons of butter, melted

Cook the egg noodles according to package instructions and then combine the first six ingredients in a casserole dish. In a small bowl, crush the crackers and then add the butter and cheese. Top the casserole with this mixture. Bake, uncovered at 375 for 25 minutes or so, till it's all bubbly and the top is browned.

we boil pasta - macaroni, rotini, etc., brown hamburger (you could use italian sausage also), mix together.
then add sauce. whatever you like or have in the cupboard.
variations include adding onion, mushrooms, green pepper.
baking at 350 for about 1/2 hour.
then adding mozzarella cheese in the last five minutes to melt on top.
garlic bread or breadsticks.
easy and quick.

i made a potato back that was to die for yesterday. but i dont know the exact amounts of stuff. we kinda just threw it todether, but you can look up the recipe online.

We had 5 potatoes peeled and sliced very very thin. then boiled the potatoes for about 15mins (might hav eto doit in two shifts.) then in another pot you simmer 300ml or thickened cream, we added garlic and thinly sliced onions to it. you just want to heat the cream up, so it doesnt really matter how long it is bioling/simmering for. then placed a layer of potato down in the bottom of a greaced pan. add a layer of motz cheese then the cream/onion mixture. you can also add bacon here, that is pretty good. chop up some semi cooked bacon. then add another layer ofpotato and cheese and cream mixture and bacon then add a bit more cheese on top. i think we had the oven at 200 C or something ike that, but i am sure 350 f works well. then we left it in the oven for abou a half hour or so. actually wepulled it out when it looked good. we like to experiment here in aussie, no real measurements. but like i said you can get a recipe online somewhere. really really good! i recomend it
